Well, maybe it's best to do what I suggested earlier. Pick a model and have the others be inferior at all tracks and keep it that way. Quickest path to a spec class.
200* with a gutted thermostat in 78* weather. No bump drafting. Bleh.
You've got a problem somewhere. I think you already mentioned you have a new radiator? Water temp should be 20 degrees cooler. You might start looking for a water or airflow restriction somewhere. Might be a tough one to solve, maybe others here have some ideas.

Where is your sensor located? What gauge are you using? Have you calibrated the sensor?
hot heater hose, digital autometer, tested to 212* on the dot in boiling water.
Current plan is to change to a cheap radiator, delete the window net mesh radiator screen, wrap the temp sensor in header wrap, and add a temp sender to the upper radiator hose and add a switch to toggle between sensors. Gutted t-stat stays.
