So is there any feedback on these new crate transmissions from Mazda. Specifically how are they holding up?

We have used one in our Champcar and have 38 hours on it so far. 200 treadwear tires are a lot easier on parts than the Hoosiers so I am not ready to do the switch quite yet.

Never having taking a trans apart, how hard is it to crack a new one open and install both the hardened shiftforks and the spline spacer?

It is not that hard to do just the splined spacer. You would just pull off the tail shaft, remove 5th gear and its counter gear to get access.
The forks would require splitting the case further up. To me it would not be worth it to do it for the forks. Fork wear is partially dictated by how well or how poor the box is shimmed IMO. some boxes go easy others blast through them. By the time the forks wear out the sync's are also shot if your racing several weekends on second gear tracks.
I think Trans vendors will tell you that they went to hardening forks because of the inconsistency of the forks being provided in the rebuild market. I am not trying to talk down Mazda's parts but there have been inconsistencies from time to time.
