On a '99-'00, is the gasket supposed to be 2-ply or 3-ply? I've received 2 gaskets from Mazda recently that are only 2-ply. I have an old gasket that is 3-ply, where there is an inner core, and 2 shiny outer sheets that has indentations. The new 2-ply one has the core and a single shiny sheet. Let me know if I need to post pictures.

I've put some pretty rough and different looking gaskets on and they all seal fine. The manifold is flat and rigid, so should be the head.
Not sure which one is "correct" but I'm not taking my car to be judged at Pebble Beach either.

The proper factory gasket has an aluminum layer that faces the head and a stainless layer that faces the exhaust manifold. As noted anything works and gaskets are open so run whatever you want

Ahhh...Thank you. I previously had a Fel-Pro one...it has aluminum on both sides. The Mazda ones only have aluminum on one side. I thought they were defective...I threw one away. Duh!
