I see that air conditioning systems can be removed. Does that include underdash duct work?

You can remove the duct tubes but most leave the vents in the dash. You may want to leave the defroster vents and I keep the heater core connected so i can defrost in the spring and fall.

It's the 4th of July, may as well start the fireworks.
6. The factory air conditioning systems may be removed. Items that serve a dual purpose, such
as the alternator/air conditioning compressor bracket, may not be substituted.
The ducts serve a dual purpose, heat/defrost and AC.
If an AC system was ordered, would the duct work come with the order?
7. Engine coolant fluid, coolant/heater hoses and clamps may be substituted. Upper and lower
radiator hoses may be replaced only with rubber or silicone hoses. Heater core may be
bypassed but may not be modified or removed. Heater water control valve(s) may be added or
substituted.

I think I will probably leave it in. I was thinking it might be nice to be able pull dash cover without pulling frame. That seems possible without ducts in place. I see that it says I may not substitue shared components, but do not know if that means I can not remove
